Here Is The Curry Gravy That The Indian Restaurants Use To Produce Their Amazing Curries

The rich, silky, nutty flavor of ghee adds an incomparable flavor to food. Along with exotic spices, ghee is what gives Indian cuisine its depth of flavor and unique aromas.

After combining the meat mix mixture, wash your hands and dry them thoroughly and dust them with flour. Take about a walnut size of semolina mixture and roll it into a ball then flatten it. Take 1 tsp. size of meat mixture and place it in the center. Fold the semolina over the meat mixture and shape into a meatball. Set aside. Keep repeating this step with the remaining semolina-meat mixture.



Bhaturas are one of my all time favorites. Usually thick and soft, they can be crispy too and are traditionally eaten with one of many varieties of chickpea curry. Refined flour forms the base for this bread, which is leavened with yoghurt and yeast and flavored with a little sugar and salt. After try these out rising, the dough is rolled out and pulled from one side to make it slightly elongated, after which it is deep fried in hot oil.

I have experimented with adding herbs at different stages and I found the infusion strength to be best when added right after the butter has melted (just beginning to bubble).

Make sure there is no cream added to the tikka masala. If you are having rice then have some steamed rice instead of the biryani or pileau. Ask for no ghee to be added to the steamed rice. When you order curry this will normally be accompanied by Indian breads known as chapatti or naan.



In a large deep-bottomed, non-stick pan, spread of the Chicken, topped by Rice, spread evenly of the fried Onion, Mint and Coriander Leaves, Raisins, Cashew-nuts and a few drops of Saffron Milk.

Add the potato water and Ghee. Beat the potatoes on a high setting for another 4 minutes. Taste the potatoes and add more water or Ghee, if needed in order to reach the desired consistency. Beat again if you make further additions. Add black pepper to taste. Stir with a spoon and serve.
